Squash is in season! For an easy and satisfying spaghetti squash dish, cut lengthwise into halves and roast, adding butter, salt and pepper to each cavity. Scoop out cooked squash with a fork and combine in a bowl with 1/3 cup grated Parmigiano-Reggiano cheese. Add crispy, chopped bacon or sausage for a hearty touch.
Another delicious option is quinoa, a highly nutritious grain with a mildly nutty flavor. In a saucepan, sauté 2-3 cloves of finely chopped fresh garlic and sliced fennel or celery in a few tablespoons of olive oil. Add quinoa and cook as directed, substituting chicken broth for water. While it stands, stir in some chopped vine-ripened tomato, parmesan cheese, and salt and pepper.
